“美食不仅为了好吃,更是为了追求品质的生活。” 在「晶采轩」的餐饮哲学中,餐厅不仅仅是为让人果腹而存在,它代表着一种诚意,一种艺术,一种综合感官体验与情感表达的生活哲学。晶采轩以精制的粤菜为主,在坚守古法烹制经典的同时,也融入艺术创意,致力为顾客奉献佳肴美馔和极佳的用餐品质。2021年,作为中国高端餐饮品牌代表之一的「晶采轩」进驻北京,团队承袭烹饪艺术与设计艺术和谐统一的理念,让京城食客们也可以寻味到粤菜的雅奢和饮食美学。
北京城中的CBD核心金融商务区里,高大玻璃幕墙围合而成的写字楼空间井然有序,安静之中凸显出人们高速工作节奏之下的紧迫与压力。餐厅选址于此,希望以食物的动人风味和空间的精妙巧思传递独有的生活哲学理念。由此,照明设计从食客潜在的情绪状态和精神需求入手,以隐性的光的思考,力图于都市之中营造出一处“栖息地”:喝杯茶,饱足口腹之欲,感受品质生活的愉悦。
室内设计融合了诸多自然元素:铺地的卵石、大块的自然置石、透空的砖砌墙面、粗糙的砖红色立面、水滴形式的灯具装置,逐一透露出自然的气息。灯光设计首先从“改造”开始,受限于餐厅入口位于写字楼电梯厅的现实条件,设计师将电梯厅靠近入口的两组灯关掉,形成的低亮度空间实现了不同功能区域的自然过渡,同时,也有效避免冗余光线对室内空间的干扰。
前厅空间的整体亮度被调至很低,设计师希望以克制、隐性的光来舒缓食客紧绷的情绪:自外部进入,突然变低的亮度“迫使”人们放缓节奏踱步而入,在缓步之中实现情绪的镇定。空间边界围合的砖砌立面则用光自上而下照亮,营造出自然光透射到室内的美好意向。一暗一亮之间,空间就“自然”起来,削减闭塞感的同时,也让眼睛的停留有了更多位置。窄角度光线照亮了精心排布于空间内的自然置石,产生的浓重阴影拉长后落在铺地卵石之上,让每一块石头都在光线映衬下充满了故事性。
前厅隔墙的巧妙设计赋予空间丰富的虚实层次。一座与餐厅相得益彰的古建筑模型被置于靠近入口的位置,在光线的映射下,充满变化的细腻光影效果,无形中让它成为前厅空间中的绝对焦点。
暗红色为主的通道气氛浓烈,与前厅形成鲜明反差,红色陶土材质的立面质感粗粝,妥帖的光线使其愈发质朴自然;红色格栅立面繁复变化,在内部光线的衬托下更显精巧细腻。一粗一细之间,“自然”毕现。
休息区的尺度放在任何餐厅都是奢侈的。未设置重点照明强调的暗色置石沉稳厚重,像一座山峰,延续着自然的主题;石头上方垂吊着的玻璃造型在光线映照下如水滴般晶莹剔透。配合空间中精致的细节,袅袅声响入耳,颇有种大隐于市的感受。至此,自然主题的表达臻于极致。
从休息区可通往各个包房,通道整体灰色,一线亮光从顶部一侧泻下,如同自然光透射进来,与前厅遥相呼应。
包房内光线充足,层次丰富。灯光不再强调自然主题的呈现,侧重将其表达为“家中的客厅”。照明重点在用餐区、休息区、开放操作区等一众功能分区之上,同时也借助装饰灯具和艺术陈设来渲染气氛。
精致的细节、出色的品质、妥帖的光线诉说着晶采轩现代高端中餐文化的最高意境,设计师以“隐性的光”作为媒介,连接着商业价值诉求与精神情感需要,借助显性空间照明效果的表现,向人们细腻地传递味蕾的诚意与慢飨生活艺术哲学。

Exquisite Bocuse

 

“Food is not only for the sake of tasting good, but also for the pursuit of quality life.” In the dining philosophy of “Exquisite Bocuse”, the restaurant does not only exist for the sake of making people eat, it represents a sincerity, an art, a philosophy of life that integrates sensory experience and emotional expression. In 2021, Exquisite Bocuse, one of China’s high-end restaurant brands, will be located in Beijing, with the team’s philosophy of harmonizing culinary art and design, so that diners in Beijing can also enjoy the luxury of Cantonese cuisine and food aesthetics.
In the heart of Beijing’s CBD financial district, the office space surrounded by tall glass curtain walls is orderly and quiet, highlighting the urgency and pressure of people working at a fast pace. The restaurant is located here, hoping to convey the unique philosophy of life with the touching flavor of food and the subtlety of space. Thus, the lighting design starts from the potential emotional state and spiritual needs of the diners, and uses the implicit thinking of light to create a “habitat” in the middle of the city: a cup of tea, a full stomach, and the pleasure of quality life.
The interior design incorporates many natural elements: pebbles, large natural stones, hollow brick walls, rough brick-red façade, and light fixtures in the form of water drops, revealing the natural atmosphere one by one. The lighting design starts with “transformation”. Due to the fact that the entrance of the restaurant is located in the elevator hall of the office building, the designer turns off the two sets of lights near the entrance of the elevator hall, forming a low-light space to achieve a natural transition between different functional areas, and at the same time, effectively avoiding the interference of redundant light with the interior space.
The overall brightness of the vestibule space is adjusted to a low level, and the designer hopes to soothe the tense emotions of diners with restrained, hidden light: when entering from the outside, the suddenly low brightness “forces” people to pace in at a slower pace and achieve emotional calmness in the midst of slowing down. The brick façade enclosing the boundaries of the space is illuminated with light from the top down, creating a beautiful intention of natural light penetrating into the interior. Between the dark and light, the space becomes “natural”, reducing the sense of confinement while allowing the eye to rest in more places. The narrow angle of light illuminates the natural stones carefully arranged in the space, creating a strong shadow that falls on the paving stones, making each stone full of stories under the light.
The clever design of the partition wall in the vestibule gives the space rich layers of reality and fiction. A model of an ancient building that complements the restaurant is placed near the entrance, and under the mapping of light, it becomes the absolute focus of the vestibule with its delicate light and shadow effects.
The dark red-dominated passage has a strong atmosphere, forming a sharp contrast with the front hall. The red terra cotta façade is coarse in texture, but the proper light makes it more rustic and natural; the red grille façade is complex and varied, and is more delicate and refined under the backdrop of internal light. Between one coarse and one fine, “nature” appears.
The scale of the lounge area is extravagant in any restaurant. The dark-colored stone, which is not emphasized by key lighting, is calm and heavy, like a mountain peak, continuing the theme of nature; the glass shape dangling above the stone is as crystal clear as a water drop under the light. With the exquisite details in the space, the sound of curling into the ear, there is a kind of feeling of hidden in the city. This is the ultimate expression of the nature theme.
From the lounge area, there is access to each private room. The channel is gray in color, and a line of light cascades down from the top side, just like natural light, echoing the front room.
The private rooms are well-lit and richly layered. The lighting no longer emphasizes the presentation of natural themes, but focuses on expressing it as a “living room at home”. The lighting is focused on the dining area, the lounge area, the open operation area and a host of other functional areas, while also using decorative lighting and artistic furnishings to enhance the atmosphere.
The exquisite details, excellent quality, and proper light speak the highest meaning of Jing Caixuan’s modern high-end Chinese culture. The designer uses “hidden light” as a medium to connect commercial value demands and spiritual and emotional needs, and with the performance of explicit space lighting effects, to delicately convey to people the sincerity of taste buds and the philosophy of the art of slow food life.
